The Heritage of Kashmir Saffron

Kashmir saffron, known locally as "Kesar", has a history spanning over two millennia. The unique combination of altitude (1,600m above sea level), soil conditions, and climate makes Pampore the only place in India — and one of the few in the world — where saffron thrives naturally.

Each saffron crocus flower produces only three delicate stigmas, which are hand-harvested at dawn before the flowers fully open. It takes approximately 150,000 flowers to produce just 1 kilogram of saffron, making it the most labor-intensive spice in the world.
